Toum - Lebanese Garlic Dip aka Schwarma Sauce
Ingredients
⅔ Cup Garlic cloves
¾ teaspoon Salt
1 Cup Avocado Oil
1 Cup Light Olive Oil
2 tablespoon Fresh Lemon Juice
Instructions
- Peel and press your garlic cloves, add to the bowl of your food processor, along with the salt. Process until it forms a paste, scraping down the sides of the bowl a few times.
- While the processor is running, SLOWLY stream in the oils and lemon juice slowly, alternating between oils and juice. I measured both oils into a larger measuring cup, and streamed about ½ cup oil, then 1 teaspoon of lemon juice.
- I allowed about 30 seconds between each individual stream – so oils, 30 seconds, lemon juice, 30 seconds, etc. This was to make sure it didn’t “break” the emulsion.
- Once all the oils and lemon juice have been added, allow the processor to run until you have a nice, thick, whipped product that’s about the consistency of a thick mayonaisse. Cover and store in the fridge for up to a week or so. (IF it lasts that long!).
- Serve as a veggie or pita dip, in wrap sandwiches, with stiffed grape leaves, or wherever else you feel like getting punched in the face with garlic.

Chicken Hot Dish
I'm from Minnesota. Hot dish is what we call casseroles. There is a tradition of the basic hot dish: protein (beef, chicken, pork, canned tuna), a drained, canned vegetable, cream of (something) soup and cooked noodles all mixed together in a 9" x 13"pan, and something crunchy to go on top (potato chips, chow mein noodles). Bake until bubbly and you have hot dish!
Here's a more formal recipe for you.
Ingredients
2 cups chopped, cooked chicken
4 cups cooked noodles
1 can of cream of chicken or cream of mushroom soup
1 tbsp chopped onion
4 tbsp butter
2 tsp salt
1 1/2 cup chicken broth
1 1/2 cup milk
1 tsp lemon juice
1 tsp worchestershire sauce
Instructions
- Arrange chicken, noodles, soup, and onion in a casserole dish.
- Make a sauce of the remaining ingredients in a separate pan, cooking over a low heat until smooth and thick.
- Pour sauce over the chicken mixture.
- Bake for 1 hour in a 325 - 350 degree oven.
3-2-1 Mug Cake
This is another one of those incredibly easy cake options perfectly sized for 1.
Ingredients
1 box angle food cake mix
1 box of cake mix (chocolate, vanilla, strawberry, spice - choose your favorite!)
water
Instructions
- Pour both boxes of cake mix into a gallon sized sealable storage bag and shake to thoroughly combine the mixes.
- Put 3 tablespoons of the combined cake mix in a microwaveable coffee cup.
- Add 2 tablespoons of water.
- Stir the water and cake mix together to form a batter. Be sure to scrape the bottom of the mug to get all the cake mix granules wet.
- Cook for 1 minute in the microwave.
- Be careful when you remove the hot cup from the microwave. The resulting cake will fill about half the cup and have a spongy appearance.
- For a boozy option, replace the water with Kahlua or Bailey's Irish Cream.
2 Ingredient Chocolate Muffins or Cookies
Makes 12 regular or 36 mini muffins or 36 cookies.
Ingredients
15 ounces canned pumpkin puree (not pumpkin pie mix)
1 box (15.25 ounces) devil's food chocolate cake mix
Instructions
- Position an oven rack in the center of the oven.
- For muffins, preheat the oven to 400F degrees and line 12 muffin cups or 36 mini muffin cups with paper liners or coat them with non-stick spray.
- For cookies, preheat the oven to 350F degrees and line cookie sheets with parchment paper or coat with non-stick spray.
- Make the batter in a large bowl by mixing just the two ingredients together, ignoring the instructions on the cake mix. This will take some effort and the mixture will be very very thick!
- For muffins, place batter into the prepared (or mini muffin) tins. Bake at 400F degrees until a toothpick inserted in the center comes out clean, about 20 minutes for muffins and 12 minutes for the mini-muffins.
- For cookies, drop by tablespoonfuls, 2 inches apart, onto prepared cookie sheets. Bake 9 to 12 minutes, or until the edges are firm and the centers are just barely set when lightly touched.
Remove from the oven and cool for 1 minute on the cookie sheets and then transfer the cookies/muffins with a spatula to wire racks to cool completely.
